The organic acid functions, which play a central role in vinegar composition, have been studied, using enzymatic techniques, in various types of vinegar, including traditonal balsamic vinegar from Modena, "Modena balsamic vinegar", wine and vinegar prepared with apple must. These components contribute significantly to the bouquet and to the aromatic flavour of vinegars.
