Microsystem based on soluble alginate (Na-A) was developed by spray-drying technique and subsequently stabilized by calcium ions and chitosan. The susceptibility of the protein and peptide molecules to complexation or denaturation reactions with loss of activity requires the harmlessness of both the process conditions and excipients. In this regard, the applicability of the spray-drying technique in producing a soluble alginate microsystem as a carrier of enzymes, LDH as a model, was evaluated. Moreover, the role of protectant molecules preventing the enzyme degradation owing to both complexation reactions and dehydration was defined.
